Meatless Monday
What’s all the fuss about eating meat or not?
Animal rights, sure, that could be one reason.
Health benefits? I think that has a lot to do with the movement. It has been proven that reducing the amount of animal protein in your diet can potentially reverse chronic diseases including cancer, heart disease, and diabetes.
I’ve been learning a lot about the effects - both beneficial and detrimental - that come from the amount of meat in your diet. I was raised in a household that proposes that a meal is not complete unless there is meat on your plate. My goal for Christmas break is to change these ideas a little bit, or at least make my family start thinking about their long-term health and quality of life.
So I made dinner.

It started by pouring some dry red wine into a pan of sautéed onions, garlic and arborio rice.

Like any typical RISOTTO recipe, I then added chicken broth, one cup at a time until it was almost fully absorbed in the rice.

I then made a spinach salad with craisins, pears, balsamic vinegar, and oil.

So this was the final meal. 1/2 salad, 1/2 risotto. Not necessarily a whole grain, but a good source of vegetables nonetheless. This red wine with pea risotto was found here and the salad was conjured up in my own crazy head.
I encourage you, just for one day, DON’T EAT MEAT! For your body, your future, your health. Or for the animals. Or for me. Maybe if this fruit and veggie based lifestyle will make more of a change in your life than you anticipate! Ya never know if ya don’t try!
